This tasty ridged gourd lentil soup (பீர்க்கங்காய் பருப்பு சூப்) is very filling and can be used to replace rice during lunch or dinner. This protein and fiber rich soup can also be used as a side dish for rice.
Peel ridged gourd and chop into small pieces.
In some gourds, the seeds will be very hard and big and they can be removed before cooking. The gourd that I used today had soft seeds in the center so I am including them.
Urad dal/ black gram
Turmeric powder, salt, Asafoetida powder
Finely chopped garlic
Coriander leaves / Cilantro
Moon bean – Wash thoroughly, cook in pressure cooker with 4 times water. This can be cooked in regular vessel as well but you might need to keep an eye on the water lever. Add a teaspoon of oil while cooking and this will make the dal soft.
Dal is cooked and ready to be mashed.
Method for cooking ridged gourd lentil soup
Heat a teaspoon of oil and add mustard seeds. When the spluttering stops, add cumin seeds.
Add other ingredients one by one. Add an item, stir few seconds and add next item – curry leaves, garlic,
urad dal, green chili, onions.
Next add salt, turmeric powder and asafoetida (hing).
Finally add cut ridged gourd, tomatoes and coriander leaves.
Sprinkle water if necessary and cook well till the vegetables are cooked.
Then add mashed moong bean dal and allow everything to simmer in low heat for 5 minutes.
Garnish with cilantro and serve hot. You can also mix a bowl of this with a small cup of rice and eat if are a south Indian and find it hard to completely stop eating rice.
