This immunity boosting mutton ribs soup ( மார்க்கண்ட சூப் – நெஞ்செலும்பு சூப்) is easy to make but is loaded with goodness.
This is a simple soup that does not require any complicated cooking steps and can be made using pressure cooker/ slow cooker / just a regular vessel. This soup has been a life saver for us during the flu season.
You can use these 4 ingredients as such or you can
- Grind pepper and cumin seeds coarsely.
- Make a paste with ginger and garlic.
Onions – finely chopped
Cilantro / coriander leaves – wash and chop
Curry leaves – Wash
Mint leaves (optional) – wash
Cumin and pepper – ground coarsely
Ginger and garlic paste
Mutton ribs (250 gms) – To wash, add a teaspoon of turmeric and add water to bowl. Leave for a couple of minutes and then wash as usual. Turmeric is an antiseptic and it also removes raw meat smell.
Method for cooking mutton ribs soup
Cooking does not involve any complicated steps. We won’t be using a drop of oil or frying anything. So simply add all the ingredients into the pressure cooker.
Add salt – Add less as volume will reduce. You can always add salt later.
Add 8 cups of water and close cooker.
Cook @ high heat till 5 whistles and then reduce flame and allow the soup to simmer for 15 minutes. Switch off stove and allow the steam to get released automatically.
Garnish with coriander leaves just before serving. If cooked properly, the bones will be soft by now and can be chewed if one is suffering from Calcium deficiency or Iron deficiency.
