Curry leaves (Kadi patta / கருவேப்பில்லை) is extremely healthy especially for those who are having Anemia or gray hair. It is rich in Iron and is used a lot in south Indian dishes.
Here is the recipe for curry leaves chutney (Karuveppilai Thogayal)
Wash curry leaves.
Red chili and tamarind.
Dry roast urad dal.
Heat oil and temper with mustard seeds. Add a pinch of asafoetida powder.
Add red chillies and tamarind and stir fry. You can add slightly more tamarind if you want. My tamarind is very sour so I am adding less.
Add the curry leaves and fry till the raw smell is gone. Sprinkle water if necessary.
Ingredients are ready to be ground.
Add salt and grind in a blender with as little water as possible.
Enjoy with dosa / idli. It can also be mixed with rice. If mixing with rice, add a teaspoon of sesame (gingelly) oil to hot rice and mix (not mash). Then mix this chutney to the rice and eat with papad / vadagam.
